This Is Not A Recipe: Guacamole

I was going to try to do something different with this bag of avocados. I know they are delicious in salads and sliced onto sandwiches. I could probably come up with a dozen easy ways to incorporate them into everyday dishes.

But first I would have to resist the temptation to turn them into guacamole. That, I am not capable of.

So here’s how to make easy guacamole with whatever you have around.

You know how to get the pit out, right? Whack it with a knife and then, once the knife is lodged into the pit, twist.

Add lime juice, salt and pepper and mash with a fork. (Lemon juice will also work if that’s what you have going.)

I often stop here. It’s delicious as is.

But if you have the time and the ingredients on hand, you can add extras to make your guac even better. I added finely chopped cilantro, onion, garlic and freshly diced tomatoes. Seeded jalapenosĀ are also great, but my kids can’t handle much heat. Ā Don’t sweat the measurements. Add a couple pinches, more or less.

And all was right with the world.

Except I forgot to get tortilla chips, so I put it on a cracker.

Still good.

One last fun fact. Avocados are nutritious and delicious on their own, duh, but they also help the body absorb more fat soluble nutrients when served with other fruit and veggies. So maybe I will toss some into my salad tonight after all.
